Well, the Ross Estate winery is in a busy phase of work in the lead-up to the well earned Christmas-break &#8230; blending of the superb 2008 red wines out of barrel and getting them ready for bottling has been at the forefront of the majority of work in the cellar in the last few months. This is a time-consuming process as it requires me to taste each individual barrel in the cellar. We keep each block of the vineyard separate until this process as it presents much greater blending options. Each barrel contains its own individual characteristics and this is important to consider when deciding on each wines style. Being a small Estate producer the wines produced from the â€˜singleâ€™ vineyard are slightly different each year, but they still retain a sense of style and this is why the barrel tasting sessions are so important. And yes, it is a bit of fun to taste all these wines before you ask!</span></span></span></span></p>
<p><span style="font-size: small;"></span><span style="line-height: 115%;"><span style="font-size: xx-small;"><span style="mso-tab-count: 1;"><span style="font-size: small;">With the success and acclaim of the 2006 Single Vineyard Merlot, this wine has now been added to the portfolio as an integral part of the range. The 2008 version looks excellent, with restrained oak influence supporting the black cherries and olive characters. Another wine to be reinstated is the 2008 Ross Cabernet Sauvignon/Merlot blend that was always a favourite with the customers and staff alike here at the winery. This is a fruit driven wine perfect for food matching&#8230;grab one to have with your barbieâ€™s this summer!The second round of Barrel rackings of the 2009 red wines is just about to begin. This is the process of emptying each batch of barrels from the separate blocks of the vineyard into tanks, washing the barrels to remove tartrates that formed over the cold winter months, adjusting the wine in tank and finally returning it to the oak. This process helps to clarify the wine and gives me a good chance to evaluate each parcel on its own merits to see how it is developing. Sometimes barrel swaps occur at this time if a parcel is picking up too much or too little oak influence. The wine is then â€˜put to bedâ€™ until final blending in 9 months time.</span></span></span></span></p>
<p class="MsoNormal" style="text-align: justify; margin: 0cm 0cm 10pt;"><span style="line-height: 115%;"><span style="font-size: xx-small;"><span style="mso-tab-count: 1;"><span class="aligncenter"><span style="font-size: small;">Well, thatâ€™s it from me, do enjoy the Christmas break and the time spent with family and friends. In the wine industry, itâ€™s very much the rest we need before the next vintage unfolds upon us. Fortunately we can â€˜close up shopâ€™ and the cellar remains very cool. This is a credit to the engineering of the owner Darius Ross, who designed the cellar buildings. Please drop into the cellar door during the Christmas holidays. Our friendly and knowledgeable staff are on hand to provide an enjoyable experience for you. </span></span></span></span></span></p>

			<content:encoded><![CDATA[<p><img class="alignleft size-medium wp-image-358" title="amongst the oak" src="http://www.rossestate.com.au/wp-content/uploads/lex_filtered-300x248.jpg" alt="amongst the oak" width="126" height="104" />Winter is now upon us in the Barossa and the cold and frosty nights are not far away.Â  It&#8217;s a great time to kick back with a great glass of red and chat about the winery happenings in front of the open fire in Cellar Door.Â Â  Currently all of our reds have gone through malolactic fermentation and have had their first racking out ofÂ barrel.Â Â  The Cab and Merlot look to be of very high quality at this early stage, this is despite the heat wave of February.Â Â All other batches are of good qualityÂ and time will tell as to what will be the pick of the vintage!</p>
<p><img class="alignleft size-thumbnail wp-image-383" title="rossrackingweb2" src="http://www.rossestate.com.au/wp-content/uploads/rossrackingweb2-150x103.jpg" alt="rossrackingweb2" width="150" height="103" />We&#8217;ve bottled our first white for the year, &#8216;Ross Semillon 2009&#8242;, it is to be the first release of a straight Semillon since the 03 vintage.Â Â  The quality and characteristics ofÂ the wine were too good to blend - an excellent example of Barossa Semillon with zippy acidity and amazing length on the pallet!</p>
<p>Our 2008 reds are maturing nicely in barrels.Â  I will start looking at blending options in August and September and all final blends will be bottled by the end of the year.Â  Of course before deciding the final blends I will taste each barrel, this usually takes about two weeks.</p>
<p><img class="alignleft size-medium wp-image-380" title="rackingweb11" src="http://www.rossestate.com.au/wp-content/uploads/rackingweb11-200x300.jpg" alt="rackingweb11" width="144" height="216" />Tough job this winemaking, tasting wine all day!Â  But seriously it&#8217;s a very important, challenging and rewarding process as each barrel contains it&#8217;s own unique flavours and qualities.Â Â  Drop by Cellar Door during winter to catch all the events happening at Ross Estate.Â  I&#8217;ll be pouring wines on the 28th of June for the Barossa At Home event.Â  We also have the South Australia Living Arts Display &#8216;SALA&#8221; in August and of course the Barossa Gourmet Weekend is coming up in late August and promises to be better than the last&#8230;See you here!!</p>

&#8216;It&#8217;s mid August now and the pruning of our vines is complete.Â  With the likelihood of minimal water available to the vines this season, we are 70mm down on rain so far this year.Â  With this in mind, we pruned to give the best advantage for a good vintage at years end.Â  September will see the first buds opening, on the white varieties, quickly followed by the reds.Â  As Tempranillo has now gained a strong following, we are grafting more vines to this Spanish variety.Â  The reds from the 2008 vintage at Ross Estate has given us some of the best grapes I have seen in 15 years.Â  Shiraz, Cabernet Sauvignon, Tempranillo, Merlot and the old faithful Grenache were outstanding.Â  I must give thanks to the vineyard team for an excellent year and the winemakers for looking after the wine for the next two years before you can taste it!!&#8217;<br />

&#8216;As the cold of the winter months pass and the warmth of springs greets us at the wineryâ€™s door every morning, we can look back at the happenings of the cellar after the hectic rush of â€˜vintageâ€™.Â  </span></span><span><span style="Times New Roman;">We have finished bottling all of our 2008 white wines after weeks of blending, stabilising and filtering. The early morning starts to sterilise the bottling line were worth it as all the wines look fresh and zesty, especially the new â€˜Imposterâ€™ blend.Â  </span></span><span><span style="Times New Roman;">In June we completed primary racking of the 2008 red barrels and made our initial classifications for quality. Truthfully it was a hard exercise as this yearâ€™s reds are exceptional. <span style="yes;">Â </span>Picking our entire vineyard before the February/March heat wave has proved very beneficial, maintaining fresh varietal characters in both red and white varities.Â  </span></span><span><span style="Times New Roman;">In early Spring the 2007 vintage reds in barrel will be tasted to initiate the blending process and preparation for bottling before Christmas. <span style="yes;">Â </span>Most of these wines will then not be released until late in 2009, but good things come to those who wait!Â  </span></span><span><span style="Times New Roman;">Drop into the cellar door soon and possibly take a winery tour, available to anyone interested in seeing what really happens behind the scenes.&#8217;<br />
